I’m officially obsessed with baking Christmas cookies this year. This is the fifth recipe I’m sharing, and it’s a classic: Zimtsterne - cinnamon star cookies! These are nutty, spiced just right, and topped with a lemony glaze that’s crisp and sweet. They’re a little extra to make, but trust me, they’re worth it. Here’s the recipe: For the dough: • 400g finely ground almonds • 1 pinch ground clove • 1 pinch allspice • 1 tbsp cinnamon • 300g powdered sugar • 3 egg whites For the glaze: • Juice & zest of 1 large lemon • 1 egg white • 200g powdered sugar For rolling out: • 50g flour • 80g powdered sugar How to make them: 1️⃣ Beat the egg whites into stiff peaks. In a separate bowl, mix the almonds, powdered sugar, cloves, allspice, and cinnamon. Slowly fold the dry mix into the egg whites, then knead into a smooth dough with a mixer (use dough hooks). Chill for at least 40 minutes. 2️⃣ Sift together the flour and powdered sugar, then dust your countertop with it. 3️⃣ Roll the dough out to about 1 cm thick on the floured surface. Cut out stars with a cookie cutter, dipping the cutter into the flour-sugar mix often to prevent sticking. Place the stars on a baking sheet. 4️⃣ For the glaze, whip the egg white to stiff peaks, gradually adding the powdered sugar and beating for about 10 minutes. Stir in the lemon juice at the end. 5️⃣ Brush the glaze over the cookies and bake at 160°C (fan) for about 15 minutes. Make sure they stay light in color! Here’s how I made the dough: 🍪 500g flour 🍪 6g baking powder 🍪 150g sugar 🍪 1 packet of vanilla sugar 🍪 2 eggs 🍪 250g butter 🍪 Extra flour for the countertop Mix everything together - first with a mixer, then knead it by hand on a floured surface until the dough is smooth. Wrap it in cling film and chill in the fridge for about 15 minutes. After that, roll it out to about 5mm thick. I used bat and ghost cookie cutters (from Amazon), cut out the shapes, and baked the cookies at 180°C for 10-15 minutes. For decorating, I originally thought about using white frosting for the ghosts, which would have looked great. But to keep things simple and save time, I decided to use the same cocoa frosting for both the bats and the ghosts instead of whipping up a second batch. It turned out perfectly, and the chocolate ghosts looked just as cute! I used sugar sprinkles for the eyes. Since I eat strictly keto, eggs and bacon are always part of the plan, and I honestly look forward to it every single day. I like to add variety with keto-friendly veggies to get some extra nutrients. Rule of thumb: stick to above-ground veggies since they are lower in carbs compared to root vegetables. Some of my favorites include: Mushrooms, Onions (in moderation), Bell peppers, Tomatoes (also in moderation) and Spring onions. But honestly, you can keep it simple with just eggs, bacon, and cheese. How I Make It: 1️⃣ Chop everything into small pieces. 2️⃣ Start by frying the bacon (crispy, of course). Once it’s done, I add a little butter to the same pan and toss in the onions. 3️⃣ After a minute or two, I add the mushrooms and let them fry for a bit. 4️⃣ Crack in 4 eggs - that’s my go-to, but you can do more or less depending on how hungry you are. 5️⃣ Turn the heat down, give the eggs a gentle stir, and add the cheese. Today, I went with mozzarella balls, but I also love using feta. 6️⃣Add the bacon back, put a lid on the pan, and let everything fry and steam until it’s perfect. Why This Breakfast Works So Well on Keto: 1️⃣ Eggs are a nutrient powerhouse. Packed with protein, healthy fats, and essential vitamins (like B12, D, and choline). A complete protein source that keeps you full and energized. 2️⃣ Fat is your best friend on keto. Fat is highly satiating and keeps you full for hours. Season it just right! I use a mix of marjoram, thyme, lovage, salt, and pepper, but you can add your own favorite herbs and spices. 4️⃣ Fill the zucchini boats with the beef-zucchini mixture and top with a generous sprinkle of grated mozzarella (the more, the better, right?!). 5️⃣ Pop them in the oven on grill mode for about 20 minutes, until the cheese is melty and golden. Here’s how I made the dough: 🍪 500g flour 🍪 6g baking powder 🍪 150g sugar 🍪 1 packet of vanilla sugar 🍪 2 eggs 🍪 250g butter 🍪 Extra flour for the countertop Mix everything together - first with a mixer, then knead it by hand on a floured surface until the dough is smooth. Wrap it in cling film and chill in the fridge for about 15 minutes. After that, roll it out to about 5mm thick. I used bat and ghost cookie cutters (from Amazon), cut out the shapes, and baked the cookies at 180°C for 10-15 minutes. For decorating, I originally thought about using white frosting for the ghosts, which would have looked great. But to keep things simple and save time, I decided to use the same cocoa frosting for both the bats and the ghosts instead of whipping up a second batch. It turned out perfectly, and the chocolate ghosts looked just as cute! I used sugar sprinkles for the eyes.
